Hand harvested and spontaneously fermented with wild yeasts, minimal intervention throughout. Delicate and mineral, showing pear and the variety's classic white pepper over lemon, lime, grapefruit and a touch of apricot, with a steely, mineral backbone. Made for schnitzel, roast chicken or lightly spiced dishes.
